Sounds strange, but definite possibilities. As for meals for one, chicken breasts are always good. You can marinate them and use them over a few days for different meals. Wraps, salad, tacos, with veggies. It depends how creative or lazy you feel.
On a side note, I bought a George Foreman grill that has temp setting and a timer. It's phenomenal! Everything I cook on it comes out great. It's definitely good on those lazy days.

Chickpea salad is nice, refreshing, and quick. Has a lot of protein to keep you energized and feeling hungry

-1 can of chickpeas drained and rinsed (Unico brand taste the best).
as much of the following as you want
-Diced cucumber
-Diced grape tomatoes
-Diced orange pepper
-Couple or more raw garlic cloves, minced.
-Italian parsley
-Shredded beets would be awesome, but have yet to try them.
-Goat cheese (the creamy stuff) crumbled throughout.

-In a small container with a tightly fitting lid, add some olive oil, equal parts white vinegar, and a splash of balsamic. Add about 1/2 a teaspoon of dijon mustard, a tiny bit of honey to even out the acidity, and a healthy pinch of oregano. Put the lid on it, and shake the crap out of it until emulsified.

Pour the vinagrette over the veg and cheese, toss, enjoy!

Not only is great for solo meals our groups, but it tastes better the next day as the flavour marry. It's really good for you, a tiny bit goes a long way (chickpeas are very filling), and saves on hydro/gas as no cooking is required. In the end it only takes about 15 minutes, or less if you are good with a knife Smile

PS - I can't believe I never noticed this thread. I LOVE to cook! Cool
PPS - No, I am not a vegitarian. I LOVE meat, and even pride myself on making the best steak around - butter brushed, perfect grill marks, always cooked perfectly! Mmmm...

Great salad recipe Rhynox Thanks ! I grow all the veggies and the parsley except for the beets which I shall get at a local farmers market along with the cheese. It will be a fantastic summer treat Plus one

I'm glad you like it! Smile My family loves it.

I wish I could grow all of those, but my dog would destroy my garden. I miss going out picking some fresh basil, tomatoes, hot peppers, and making one hell of a pasta sauce!

Don't forget, if you use beets, save the tops! They are great to eat, good for you, and very tasty. You can eat them raw (IE: in a salad or as a salad), or cooked.

Mikko eats the tomatoes off the plants right as they get ripe same with strawberries and raspberries and apples. Luckily we get a ton of apples and raspberries

I felt like cooking something different; I ended up making spicy pineapple fish curry. It came out tasting great! Very Happy= :D

I looked up many different recipes and took things from each of them and ended up making my own. I may tweak it in the future for more garlic and spicy peppers, possibly use mango instead of pineapple. This was the recipe I ended up making.

Today in me den will be known as "Dingos Cooking Adventures"

Making Choc chip cookies, brownies, Choc chip muffins and the rare choc/red velvet muddy cake.

Those who dont know what a choc/red velvet muddy cake is you will die of choc overload.
It a 50/50 cake, lower 1/2 / base is a mudcake with the top half being red velvet cake with choc coating/choc chips over it and a light coating of crushed cinimon sticks. There more to it but me not going to say as its a family secret
.

Me making them for me to eat as well as for me nephew as he is having a food stall for a school fete and has told everybody including teachers about me cakes baking goodness.
Once they done me will find the batteries for camera and takes pics so all of yous can drool over your keyboards.

Seriously, everyone needs to take pics of their meals cause I wanna see them.

Also Yesterday I decided to cook something a bit moreish than straight forward dinners.

Got a bit of steak, nice piece, tenderised it without beating it to crap. Dipped it into a puree of bell peppers and tomatoes with a bit of chili and cracked pepper. Let it sit for a while till it got a good coat. Heated up the pan to a medium heat and cooked it for 5 minutes on either side (Medium heat not high, chili burns easy when your fry it and good f*** the smell from it will have you choking and coughing). Chunky wedges par boiled for 5 mins, par fried in the deep fat fryer for 2, then oven cooked with cajun for nearly 20 to 25 mins at 200 (I always cook potatoes in the oven for a long time cause I want them soft on the inside, crisp on the outside, but not burnt so careful) and on the side, butter covered corn on the cob.

Yummers Lod ! Heres a meat tenderizer I use that really turns tough steak to a tender cut. It doesnt flatten out the meat as much as a hammer. Works great for getting dry rub and marinade flavorsinto the meat . [You must be registered and logged in to see this link.] I do have a nice meat hammer/mallet also for flattening chicken and sometime beef, mostly for certain dishes.

Simple Easter dinner tonite since my wife works Sunday. Baked Ham butt portion, steamed asparagus with lemon and butter and baked Idaho russet potatoes. Dessert was a Marie Calendar Lemon Merengue pie. We usually get all sorts of meals out of the ham until I make a nice split pea soup out of it.

Well I know what I am going to make for tea tonight.

Get some Bell Peppers. Cut them in half so they are large rings. Clean em out. Put em on a heated baking tray with a bit of oil. Put some sliced tomatoes inside the halves. Crack an egg into the rings, put a bit of butter in and some thyme. Bake.

Take out and devour, with a side of a cuppa tea and maybe some brown bread toasted...

Azira - I completely forgot about Easter and chocolates, yet I bought a lot of chocolaty stuff. Laughing

I've been trying out some of Hansen's diet sodas. Tangerine-lime and creamy root beer are very good. The cinnamon and nutmeg in the original cola are very subtle, I like it. The black cherry flavor is alright. Not bad, but I don't love it, it's pretty sweet. I want to try the kiwi-strawberry flavor, but I haven't found it in diet yet. I think they need just a bit more carbonation for a better bite.

I also picked up a 4-pack of Virgil's Zero Root Beer. I'll probably drink a bottle later today, hopefully its quality and flavor matches its price tag.

I bought some half price easter goodies today some Cadbury eggs, some Reeses's eggs and 2 bags of M&M pretzels I'll share some of it with my spouse. you can only get the Cadbury and Reese eggs around Easter time and the M&M preztels are just way cheaper. Shrug

Virgil's Zero Root Beer is okay. The stevia in it is a little strong. I prefer Hansen's diet creamy root beer.

Finally got to try Fage greek yogurt. I got a cup of "Total" and had to settle for 2% for a larger container of it. The Total is full fat, so of course it tastes the best. Razz It actually reminded me of cream cheese. It didn't have that slight sour taste that most yogurt has. Very tasty. 2% is good too. It pairs well with curry.

I made chipotle cajun sweet potato fries last night. Other than having a tad too much salt, they tasted amazing. Didn't really measure everything well, so I'll have to take better notes next time to provide a better recipe.
